Description
Leeks are a popular vegetable that can be used as a side dish or to enhance soups and stews. They can be harvested in autumn and winter, when other vegetables are largely dormant. Leeks are a good source of iron and are rich in antioxidants and vitamins A, B6, C and K.
Leeks are hardy and can remain in the soil until needed, even during winter. They grow best in open ground but also work well in large pots, containers and raised beds.
Leek plants may blossom masses of tiny pale pink and white flowers the summer after harvesting. These appear as spherical clusters on top of tall stems and attract bees to the garden, which is useful for pollinating other crops. The flowers can be left to reseed for a crop the next year or removed to use as cut flowers or as food garnish.
