Description
French Tarragon has the best flavour of the Tarragons, but is the most tender so will need protection in the winter. It is a half-hardy perennial with smooth, dark green, long, narrow aromatic leaves and tiny, yellow, insignificant flowers in summer. It is in the Rolls Royces of culinary herbs with its strong, distinctive flavour and is used with chicken, veal, fish, stuffed tomatoes, salad dressings and is the main ingredient of béarnaise sauce.
